Otik's Spiced Fried Potatoes

Got this recipe from Leaves from the Inn of the Last Home (The Complete Krynn Source Book). Avid fans of Dragonlance world surely have heard of this dish. Adventurers and locals make this specialty into their favorites. I have always dreamed of "creating" the recipe. I thought it would be a bit spicy yet deliciously addictive. Well! Let's get to the point.

Ingredients: 1 pound potatoes, 3 tablespoons butter, 1/2 medium onion, finely chopped, 1-2 dashes of cayenne

How to Make: Scrub potatoes, and remove any eyes. Chop into 1/2-inch cubes with skins. Melt butter in frying pan (traditionally an iron skillet), and heat until sizzling. Add cayenne to butter, stir. Place potatoes in butter and fry until crisp; stir occasionally. Add onion and fry 1 more minute. Serve hot, salted to taste. Serves 2-4.

I made it according to the recipe, but for some reasons I decided to peel the skin. The result? Well. Okay. Not that delicious, though. I plan to alter the recipe a little, maybe by adding ground garlic, rosemary, oregano...

I saw this post years ago and should have commented then:

1) LEAVE the skins on. In fact, use old potatoes and don't scrub them too hard. Skin and a hint of earthiness are critical.

2) Your photographed potatoes are frighteningly pale. The solution is called a cast-iron pan. These potatoes are supposed to blacken - a lot. If they don't, they taste bland and boring. Seriously, cast-iron or don't bother.

3) I think they call for 1/3 shaker of cayenne pepper. You need at least 1/6 shaker of cayenne per two servings if you really want the potatoes to be good. 1/3 the shaker is better (of course, I love hot food)

To cook:
chop everything properly first
melt butter in a cast-iron pan set to medium
put the diced potatoes in the pan
add cayenne pepper
cook/burn for 5 minutes
flip
cook 5 more minutes
flip
cook 5 more minutes
put half the chopped onions in
add more cayenne pepper
if dry, add butter
flip
cook for 5 minutes
add the rest of the onion
add more cayenne pepper
cook for 5 minutes or less
serve
salt and pepper to taste.
