I didn't feel well last week. A touch of flu. And I got a massive allergy attack two days ago. Been yearning to do some baking. Something simple and fun. That doesn't require tons of steps.
Luckily, I got Cook's Library: Baking for about 30,000 IDR. (Kinokuniya was having a sale!) Quite a steal, huh. I found a banana cake recipe here that includes dates. I replaced dates with dried longans and made modification of the recipe (as always!). Feel free to modify my modification later. :D
Oh, the beauty of this recipe, it doesn't require a mixer!
Banana & Dried Longan Cake
Ingredients:
- 2 cups of flour
- 150 gr butter (I used white butter, without salt)
- 1 tsp baking soda
- a pinch of salt
- 2 bananas, mashed
- 1 cup of dried longans
- 2 eggs, beaten lightly
- 3/4 cup sugar
- 3 tbsp honey
Sieve flour, baking soda, salt into a large bowl. Add the butter. Mix with your hands until the dough becomes crumbly. Add sugar, dried longans, bananas, eggs, honey. Stir until the dough becomes sticky and thick. Put the dough in a tin greased with butter/margarine, bake using 160 Celcius degrees for about an hour. (stick the cake with a toothpick, when it comes out clean, then it's done!) Cool. Slice some and... enjoy!
