I want a simple yet satisfying snack. I had some eggplants and hey, seems lovely if I combine them with mozzarella. I am baking eggplant casserole for breakfast and thought of baking these as well.
You will need:
- an eggplant
- mozzarella (about 25-30 gr would do)
- salt, water
- olive oil
- basil (I used dried variety)
Slice the eggplant according to your liking. Put them in the water with a teaspoon of salt, wait for about 10 minutes. Rinse, pat dry. Slice mozzarella thinly and arrange it on top of eggplant slices. Drizzle with olive oil and basil. Bake for 15 minutes until the cheese melts. This recipe is enough for two, or one, if you're greedy (yes, I am guilty!).
