Thin Fried Chicken


I am a fan of quick and easy cooking. My family loves this so much, they often request this dish. It only takes several minutes of your time.

For this, you will need:
- 200 gr of chicken breast fillet,
thinly sliced
- 3 tbsp shoyu
- 1 tsp sugar
- Corn flour (maizena) mixed with a bit of salt
- Oil (for frying)
- Sesame seeds (if you like)

Mix chicken with shoyu and sugar. After five minutes, coat the chicken in the mixture of corn flour. Fry until golden (it will take less than a minute, be sure not to overcook it!). Serve with sesame seeds on top of steamed rice (or noodles/pasta). Yum!

Simple Recipe of the Day: Chicken Balls Soup with Wakame

I have sore throat again. ~_~ I cough now and then and yearn for something hot and savory. So I thought of this soup. This is a simple soup and you can substitute most of it with any other vegetables that you have. I felt like eating wakame, so I used wakame. You can use carrots, peas, corn. You can also substitute minced chicken with beef.

Ingredients:
For the chicken balls:
- Mix 250 gram minced chicken with 2 cloves of garlic, chopped, one onion, chopped, one chicken egg, a dash of pepper, 1 tbsp salt, 1 tsp sugar, 1 tbsp shoyu, bread crumbs until you can form balls from it. Form balls about 2-3 cm in diameter (big or small, up to you).

 For the soup:
- 750 ml water
- 1 sachet of dashi (6 gr), you can substitute it with other broth to your liking
- 2 tbsp of shoyu (substitute with regular sweet soy sauce if you prefer sweeter soup)
- salt, sugar, pepper according to your liking
- 1 tbsp mirin (optional)
- 1 tbsp of wakame (dried seaweed)

Boil the water and add all ingredients for the soup. Stir occasionally. Add the balls into the soup until they are cooked (they will float). Enjoy it with steamed rice or somen/nyumen.

Simple Recipe of the Day: Creamy Chicken Paprika

Simple indeed, and very tasty (at least according to my kids and partner). They had second helpings. And yes, we love paprika. I am blessed because my kids like their veggies.

For creamy chicken paprika, you will need:


- 500 gr chicken breast, diced
- 1 paprika, cut thinly (I only had green, so I used that. Red is sweeter!
- 1 package of cooking cream (about 200 gr)
- Salt, sugar, pepper, to your liking
- 1 tsp powder broth (I used mushroom)
- 3 garlic, smashed, sliced
- 1 onion, diced

Using a pan and a tbsp of oil, saute garlic and onion until you can smell the yummy aroma. Add chicken, then paprika, then salt-sugar-pepper-broth. Add the cream, and stir using low heat until the chicken is done.

If you do not have cooking cream, you can use this as a substitute: heat (low) a cup of milk with 3 tbsp of butter/margarine, add 1 tbsp of flour to thicken it, if you like.
